I drank beer helped when asked and drank more beer ;D I only saw it a few times but never seen it made the same way twice. It always tasted real good. Pork shoulder boiled with cut up celery, onion, garlic and bell pepper. Simmered for about an hour then add either pork or chicken livers and keep simmering until pork is tender. Save the liquid and grind the meat stuff course. Mix cooked rice and your top secret spice mix. That means whatever you happen to have ;D But paprika, green onions, jalapenos, and tabasco are required. Then stuff it in casing.
