I only smoke jerky and sausage during cooler weather because thats when my grandpa did it. So i'm not sure how this heat would affect the meat. I just use salt and pepper and smoke it off and on for a few days and then let it hang until it is dryed through. Get your fire established and then put on some wet logs to create a lot of smoke. I just use oak.

This is a single cab long bed 1998 2wd 4.3l Chevy 1500. It is white in color with gray interior and the basic work truck package. Has the vinyl flooring, manual windows and locks. Has new battery, new front rotors, brake pads and wheel bearings. The a/c cools good. It has 214xxx miles on it. Get 17-18 mpg in town and around 19 on the highway. It is my daily driver and it runs good. The fuel gauge does not work so i use the tripometer and keep track of my mileage. It has a 34 gal fuel tank. The radio resets every time so you can not set the clock or presets but it works and has a cassette player. Will need two new tires on the front but the rear tires are good. Has a couple dings in it but nothing major and the paint is pretty good. Has current inspection and registration, clear title in hand. $1900 No  trades. Cash only. Call 512-818-5254 if interested. Posting this for a friend. He has 2 2006 suzuki ozark 4 wheelers for sale. They are both 250 engine and are two wheel drive. One is black, the other is dark green. They have low hours and are in great shape. Have been kept in the shop and never in the weather. Just used them to ride around on his thirty acres a little. $2,000 a piece or $3,800 for both of them.
