I do a lot of walk hunting myself, and have tried numerous different packs to try to find the most suitable for me.

Backpack: Camel pak makes a pack that has a water bladder in it and two compartments to put things in.  The two compartments are more than big enough to hold all the first aid supplies I take to the field with me.  The thing that i liked the most about it was that it was a skinny pack which came in handy when I had to get on hands and knees and crawl through some thick stuff.  I will try to find out the model number for you.

The best I have found so far: I have gotten a military H harness and added MOLLE system pouches to it.  I can carry my knife, garmin, big pouch for first aid supplies, small pouch for camera, and water with it.  The thing I like about it most is that all the weight is supported by your shoulders but it sits on your hips, which I feel displaces the weight much better than a pack and is more comfortable.  Plus it is not nearly as hot as a backpack.  I think my whole set up cost $40-50 at the army surplus store.
