Part of the point of feeding raw is to give them the bone to chew, Grinding or chipping is not going to beneficial in any way other than making freezing and storage esaier but you loose part of the benefits.
heart, kidneys, liver are all good sources of vitamins according to the literature that I have read on the subject. The bone marrow and chewing of the bone are beneficial to the dogs, chewing is good for their teeth and gums prevents plaque that leads to many other diseases

One day feed a slab of ribs, the next chunks of meat, we cut the leg bone with meat attached and give whole, the next day there might be a tiny part of bone left hollowed out, but usually nothing left from leg bones and never any rib bones.

I have fed 4 week old Jagd pups chicken wings which are softer bones and they devoured the whole entire thing, with the skin on and all, and were extremely healthy active pups with really good stools to clean up.
