Multiple reasons
1. keep the meat fresher.
2. want to butcher it at a later date
3. sell to a hog buyer/ station that sells wild boar meat
4. feed out until ready to process-
5. USDA processor will not accept HOGS dead have to be brought in live on the hoof.
6. adds a degree of difficulty and art to have the ability to work your dogs to do so, Anybody can use a pack of sogs that can grab and hold hogs, not everybody can use a team of dogs that are trained, obedient and work well enough to make a hog  stop hold and bay with out chewing it up and leaving marks all over it. Or asked to let it go and and go find another as soon as you grab the hog its team work and like a fine art
