Inject it with Cajun marinade. I prefer the creole butter. Then u could rub it down with chef Pauls pork magic. Wrap it in a wet bed sheet. 100% cotton please

dig the hole and cover it with a couple inches of dirt. Build a fire bed half again as big as the hole and keep adding the charcoal. A little mesquite won't hurt either. Start the fire at 10 pm and by lunch the next day anything 60-80 lbs should be good to go. The hard part is trusting that it is cooking. Don't dig it up to test it!!
