Since our constitution is was written with State sovereignty in mind...why not one state one vote when it comes to the presidency?

Because a vote in a low populous state would carry more weight than one in a heavily populated one.  Texas is the 2nd most populous state with over 25 million.  Wyoming has the lowest population with 568,000.  Vermont has 630,000.

Would it be fair for a voter in Wyoming to have more influence in the presidential race than a voter in Texas?

So, then the residents of wyoming, montana, the dakotas, etc. would be/are disenfranchised in our current system. When all you need to do to win the presidency is win 11 states there's plenty of voters/states that have absolutely zero impact on who becomes president.
