 from the specs of 3500ft per min, that's moving awfully fast on those lil wheels. I would be afraid of over heating the blade and loosing the temper, especially if the knife is so dull it wont cut hot butter and the grit ranges of 80, 220 and the a big jump to 6000, dont offer much for slowly honing the edge down.
