Just a quick tip, if you take it off the dehydrator and throw it right in the fridge in a zip lock bag it will "perspire" in the bag and absorb some of the moisture back in and wont be as tough. Also If you save some of the marinade throw a little of that in there too and shake it up it will absorb more flavor while its in the fridge. Gotta do it as soon as you pull it though.
