Yes Rednose, I've watched those videos as well. Have his book in my collection also. I think he has a big head but he knows his number 2. The meat is cut alot easier if it's half frozen. If I buy food unthawed, I'll bring it home and put in freezer for a couple hours and get it out and cut it, alot easier than if it's unthawed.
