man them old 300 are hard to kill. To me it's one of if not the best old motor ever made. Robert are we talking a minute or two before it starts jumping around or does it do it after 10 to 20 minutes of running? If it's right off the bat then I would pull the side covers off and check your push rods and lifters. If it takes a few minutes then I would check for water in the fuel. May have a head gasket giving you fits. It sounds like you've checked everything else out.
