You can keep 1 per day. They are good to eat if you clean them properly. We brine them all, then cook them however we want. You can even cook them like a steak on the grill. My wife smokes some of them and makes a dip that ain't too shabby on butter crackers. Most of the time it's a catch and release deal. They are a workout when you hit it right. We did hit them right this past weekend! Lot's of fun and sore muscles.
