Justin,  you mention Bar B Que crabs, how do you cook them? I'm a Cajun born and raised in south Louisiana and I only boil them in crab boil seasoning. Bar B Que crabs sounds interesting, tell me how you fix em.

BBQ crabs are nothing more than seasoning. They were originated in Sabine Pass by the old man who started Sartins. My wife got her recipe when she bought her restaurant.  I had no clue until she bought this place almost 7 years ago.  I thought they were actually BBQ'd. It's all seasoning !!!!!!! They are actually fried, and not put on a pit! She got people that drive a couple hours just for the BBQ crabs. They love them!

Pretty simple believe it or not, i use either "fiesta barbq crab seasoning" or "texjoy bar b q crab seasoning".....i prefer fiesta.

I'll give you a quick rundown on how i do it.....may not be right but zero complaints in almost 10yrs cookin em on my own lol. I cook mine on the same propane burner that i use for crawfish but i use a fish fryin' pot with a strainer basket. I use vegetable oil and pour it 4.5-5.5" deep. I try to get my oil to hold between 310-330F.....alotta recipes call for the grease to be at 350F but its just too dang hot for me. I cook mine for 3.5-5 minutes dependin on the batch. When they start floating i give em another minute or so then pull em out......they cook QUICK, it will surprise you at how fast the whole process is.

1. pop the top shell off,  gut and remove the gills then split em in half right down the middle........i said this was simple but if someone has never done it before it may be hard to follow.....im goin again in a day or two and ill try to remember to take some pictures of the process.......

2. Toss em in the sink and rinse em good in cold water.....,,,

3. Get some 1 gallon ziplock bags and toss the wet crabs in the bag.....

4. Add seasoning to the bags, seal em and shake em up real good.......i tend to go crazy with the seasoning but it ends up being a pain if you are plannin on cookin 5 or more dozen in the Same grease due to the fact that the excess seasoning that doesn't stick to the crab builds up in the bottom of the pot and ruins the grease.

5. I put 6-10 crab 1/2's in the basket at a time and drop em in for 3 to 5mins.

5. Throw em some paper towels let em drain a couple minutes and dig in!!!
