OK, my company is holding a welcoming ceremony for the Royal Netherland aka: Dutch/holland AirForce ICH-47F helis. There will be about 300 folks between our company, Boeing aircraft, the flight crews, and senior Dutch officials. I talked to a lot of the dutch mech, pilots and aircrews and none of them have ever had wild pork. I know how to smoke a pig, but what are some other methods to cook a whole pig? Has anybody cooked 1 in the ground, how would I go about doing it with the limited amount of bannana leaves we have here in central tx? I know this should go in the classified, but we struck out last sat at the ranch that mbennet needed help at, but would anybody with in 50miles of ft hood tx have 1,2 or 3 80-100lb pigs that I can buy or would donate for international relations. Im trying to work on my people skills so i figure what a better way than beer and food. OH I need the pigs by this coming sun so i can slaughter them, season and start cooking by tue of nxt week. thank you in advance

Charles. I had pig in Hawaii that had been cooked in the ground in banana leaves. Terrible. Absolutely no flavor. None of the smoke reached it ... so basically it was steamed pork. I didn't like it at all.

nvr been to the islands, so i didnt know how it would taste, but i do have a co-worker that was stationed there and he said it was great. the cooks might have preped it diff and diff seasonings. i dont think i have to worry bout ground pit cooking since we seem to be fresh out of bannana trees but i did see some nice palm trees, but dont think it would taste good.

Dont try something for a bunch of people that you have never done before...growing up in florida we cooked a bunch of hogs in the ground....no banana plants in FL. I used a lot of hot rocks and foill. Go with what you know...if you're not sure, don't try it for a bunch of company. Lord knows your company has an unallowable cost code...Have it catered if you are not sure. How is your dog's leg?

i do have a co-worker that was stationed there and he said it was great. Some did. Then again, some liked that poi (tarot root) and I'll be glad to never eat it again. ![Wink](http://www.easttexashogdoggers.com/forum/Smileys/default/wink.gif) I like smoke in my pork. Just adds something to it. Besides, they are coming to Texas. Why serve them Hawaiian style pork? I'm sure you will do fine. But feeding 300 is a whole lotta work. Hats off to you.

dog is doing good. he is healing excelent and the vet was a little conseaded with his own work. the company i work for are a bunch of cheap a$$es. they cant even pay us national wages, we make $10 an hr less than the same kinda work just off post. my company dont even cater our own food for mandatory events and we have pay our own way and then bring our own food. we do have lots of rocks over here, i could try the high heat and cook it on rocks. wouldnt be nothing diff than an open pit flat griddel. the last hog i smoked, it was so tender, it was almost smoked pull pork and when i went to spread the hams apart to brake the sockets, the bone was so soft it pulled apart too. that pig started at 80lbs on the hoof, and ended up barely feeding 10 people and we even had fried bass, catfish, hush puppies, fries, bacon wrapped smoked venison. im hoping 3 100lb hogs will be enough along with what other folks are bringing. i may need 3 120-150lb hogs.

3 - 100 pound hog should net about 90 Lb's of cooked meat? I have cooked a many whole hog and the meat does not go as far as you think it would. A buddy and I did a whole 60# pig in the ground. We dug a hole and lined if with bricks with a 1/2" steel plate on top. We bought a sheet set from Walmart and washed them. We injected the pig with seasoning and wrapped the pig with a sheet then saturated the sheet with the same marinade. Stuck it in the hole and lit a good fire over it for maybe 12 to 15 hours (not sure we got to drinking by this point) but it turned out amazing... Or maybe we were all drunk... Lol. Good luck

Inject it with Cajun marinade. I prefer the creole butter. Then u could rub it down with chef Pauls pork magic. Wrap it in a wet bed sheet. 100% cotton please ![Grin](http://www.easttexashogdoggers.com/forum/Smileys/default/grin.gif) dig the hole and cover it with a couple inches of dirt. Build a fire bed half again as big as the hole and keep adding the charcoal. A little mesquite won't hurt either. Start the fire at 10 pm and by lunch the next day anything 60-80 lbs should be good to go. The hard part is trusting that it is cooking. Don't dig it up to test it!! I have other recipes for different cuts. Feel free to pm me if ur interested.

Good luck I appreciate the offer of teaching me how to cook, but i been cookin for my dad n myself since i was 11 n im still teachn my wife how to cook. If it dont have instructions on the bag or box, she will deff screw it up. I didnt become a fata$$ by not knowing how cook. Aint much out there i aint cooked, well kagogi i havent tried to cook but it dang sure is yummy with a bowl of noodles or rice.

PLP, i can bout anything but i dont know much on the cussines(spell ck) of the dutch n every1 of them i talked nvr had wild pork. I told them it dont taste mo diff than domestic n sometime even better than farm raised. Shoot me a pm on whatcha got, but it really wont make a diff if i dont get some pigs. I put my name on the call list at ft hood, but its 1 of them thing where they ho down a list calln till some1 can come get them. I cant believe nobody got any live young porkers. Anybody know of a hog buyer in this area (central tx)?
