Took a few dogs and made a little loop Friday night and was able to snag a few meat hogs by the river by my house, cleaned them Saturday morning and soaked them in Ice water most of day Saturday and hung them up in cooler all night and ground them up for sausage Sunday, made a batch of chili and cheese sausage...


Had a coon ass friend up deer hunting this weekend and he wanted to make some chicken sausage, so we made 20lbs of chicken sausage as well...


Gratifying feeling being able to provide your own food sometimes...

I love to smoke hog meat but dang that sausage looks freaking great

Yes it is a gratifying feeling goose! We have our own meat processing place now! And we got ours figured out just how we like it! Looks really good just curious how the chicken sausage turn out--- might sound crazy but we made snake smoked sausage one time lol. That didn't taste the best. But why not.

The chicken was something we've never made before, it turned out good but was border line to salty, we used a seasoning blend for 25 lbs of meat and only used 20 lbs of meat, we're going to make some for cooking jambalaya and pastalaya for our New Year's Eve cook out, and going to add lemon pepper seasoning.

     The chili and cheese was a trial run as well, we've made it once before and still working on getting the seasoning down pat, it turned out real good but I'll still want to be able to taste more of the chili powder...
      We're always trying new recipes and seasoning blends...

hahahaha  a  coonass will eat anything ........ they can make a gravy out of gravel rocks hahaha little rue , onions ,gravel and several 12 ounce's ...........
