depends on how old the dog is young dogs i start in a pen older dogs i put them in the woods on the pork and either they learn  or they dont stick around long

i have started my last 4 dogs only in woods either tie out or release with older dogs.
they seemed to come more independent and hunt harder.

I start them in a pen, but once they know what a hog is and start baying it they dont go back to the pen they move to the woods.

Woods....we dont hunt in pens. Why start a dog there?  Just start him in the woods behind an older dog.  I prefer a dog to have enough instinct in the first place I dont need to start him in a pen.    "practice like you play"  I've started them in pens but it just does'nt suite me...seems like a cop out.

what can they learn in a pen ? except what a hog is , or that its your job to find the hog for them , or to get beat up with no where to go ?

Yes, i would call that training.  Ive trained most of mine in a pen if i had time to spare.  Others, Ive thrown right in the mix with my finished dogs and they picked it up fine too.
