Been eatin them 3 times a week since the middle of Jan. We have a small 3 acre crawfish pond and it's producing some real nice crawfish.

You messed up not stopping at Charlie T's...Charlie T's in Breaux Bridge has some of the best boudin you ever ate.

Really not trying to rub it in but you gotta like this. My dad baits and runs the traps, brings em back up to the front, boils em, then calls my house and tells me there fixin to hit the table in 10 minutes. I arrive and the steam is still rising from them on the table. Did I mention we been eatin em 3 times a week  Grin

Well...I've only had store bought boudin here in Texas. Lookin forward to the real thing.

  tejuns holds crawfish boils at several locations  look them up on facebook you'll be glad you did . i'll see if i can get their schedual posted up on here .

I never tried boudin from Charlie T's  but I make a run every now and then to The Best Stop in Scott. That's about a 75 mile drive but man
they got some good boudin. Will try Charlie T's next time I'm in Breaux Bridge.  Ben you ever try the Boudin from The Best Stop?

Any of u cajuns know when the best time durin bug season is to get a sack of bugs, ie: spring or summer months? How much r they goin for per lb? Best place to get a big sack of bugs?

Charles, It's all supply and demand. The ponds start first in late winter. They are not real plentiful at the start but the price is high which benefits the farmers. Later during the spring the ponds are producing at their peaks and the wild crawfish in the Atchafalaya Basin starts
kicking which puts a whole lot of crawfish on the market which drops the price. Usually after Easter the price drops a good lick.

Best stop I pretty dang good Jimco, and their cracklings are top notch also. This is the first crawfish season in 6 years we haven't owned a restaurant, and I can't say I miss crawfish season, lol. Haven't had any yet, but told the wife last week that we needed to go eat some when the price went down a bit.

 justin, how much did that sack cost? jimco, i dont know the $ per lb anymore, the last time i bought them, they were $0.50 a lb, nearly 20yrs ago. i did buy 10lbs from a place when i was living in texarkana and they were 3.50 a lb, but that came with taters n corn. anybody got any contacts they would recomend to buy from?
