Gamey taste is from stress. Take the boar alive and feed it corn for a few days or so. Then replace the water with cheap booze. When the hog is too drunk to know what is happening you kill him. I do not notice it as much if you catch the hog and leave it tied for a few hour while you are still hunting. The hog will calm down and just kill him fast. The fast painless death is not only humane it also gets you meat that is not gamey.

Soak it in vinegar over night, I've also heard milk works.

It's the testosterone that makes it gamey. I have shot big boars that were just cruising with a head shot when they had no idea I was around and they had no bed taste. So like posted above the only way I know of is kill them when they are calm. Tie and leave for a while then sneak in and 22 just above the eyes or behind the ear.

I debone mine and cut it up into smaller pieces and soak it in ice water for a couple days. Change out the bloody water and keep plenty of ice on it. The smaller the pieces the better it will be able to soak.

I gave up on the boars long long time ago...

a 300 pound sow tastes just as good as a 50 pounder...

I've tried everything and I finally came to the conclusion that some stink and some don't. I've shot some young ones in the head that died right there and never knew what was going on and they still stunk. I've also shot some huge ones that had been bayed for a long time that didn't stink at all. I think it has to do with genetics. Best way is to just cut them and turn them loose... works 100% of the time.

Onions, garlic, salt (if u choose, lemon juice) a lil vinegar and a lot of ice n like me whitten said, leave drain open n add ice as needed, keepin meat completely covered. Let set for 2-7 days till u cant smell the meat n there aint no blood runnin outa the drain but no longer than 7 days.

In my opinion...the best way would be to kill a sow.  Grin

If I do decide to cook a pig...I put them on ice for couple days. Drain water and add ice as needed. I feed most to buzzards.

We de-bone the hog (both sows and boars) while they are hanging. We cut into smaller pieces and soak in ice water and vinegar. We use 1/2 cup of vinegar to a 100 qt. ice chest. We drain and change out the water and add more ice and vinegar . We do this for 3 or 4 days. The last day do not add vinegar, just ice water.  Meat taste just like store bought pork.  Just make sure to keep draining and adding ice.

x2...only thing I do different is add salt...been doing it this way since I was a kid, but I don't waste my time on boars...

one of the reasons why this works so well is that the smaller the meat chunks the more blood bleeds out...deer meat will look like it has been bleached and when you cut into the meat it looks like lean beef...

I hunt with a 77 year old man that has caught hogs with dogs all his life and had probably forgot more than any of us will ever know. He swears that if you catch a boar
.Step #1Bring it home alive.
Step#2 Dispatch and Remove all male components sheath included.
Step #3Hang him up and run cool water through him for a couple hours. Let it over fill. You want the water to cool him from the inside out.
 Step #4 dress,skin,& quarter
I haven't been hard up enough to try it. He swears its the only way.

I have a question then....just what is 'gamey'? I'm being serious here, not making fun of your post at all Steven. I really don't know what folks talk about when they refer to meat that is gamey. I've eaten wild game all my life and I just don't get what they're talking about when they say some cut of meat tastes 'gamey' or 'wild'. To me the flesh from different critters has a different taste....some of it is better than others. I do believe that care in the field can make a big difference in the quality of the meat of any game.
We kill a few big, old boar hogs every year and eat them just as the rest of them and it's just as good as a pig to me. What I do with any hog meat is trim all the connective tissue and fat from each cut before I cook it.....if it's a bit bloody I'll soak it in salt water for awhile and that seems to do it. I put the hog meat I get in ziplock bags and never mark it as boar, sow or anything other than the date I put it up. It all tastes great to me.
I've heard folks talk about older critters being gamey or strong and I guess that can be the case, but I just don't see it myself. Game tastes like the kind it is to me......venison tastes just like venison, pork tastes like pork, duck tastes like duck.....you see what I'm getting at......I guess I'm just saying that I don't know what wild or gamey is.....it tastes like the game that it is to me. That seems to be a generic term that folks use for meat that they know before hand is from a wild game animal......might not be used if they thought it was beef or chicken or domestic pork....just my opinion.
