Had a question for you fellas and need advice actually....  Making some deer jerky for the first time and was wondering how long yall dehydrate it and at what temp?  Im going to slice it 1/8''-1/4'' thick and use an electric dehydrater my in laws got me for Christmas.  Thank you!

So im assuming the dehydrator has an adjustable temp setting? Thicker slices need to stay on till the meat is "cooked" thouroghly, anywhere from 6-24hrs. Its a big range, but the closer to the heating element, the fastr they will dry out.

I made some red deer jerky last night for the first time on the dehydrator. Marinate overnight.  I left on the dehydrator 7 hrs then let it cool off before I put in ziplocks and in fridge. Kids grabbed a sack for school!

Yes Charles it is adjustable, cant remember temps off the top of my head but anywhere from like 125-225 or so I believe....  Jerry... yes I plan on marinating tonight, all day tomorrow, and tomorrow night then putting it on Saturday morning so I can be home.

Just a quick tip, if you take it off the dehydrator and throw it right in the fridge in a zip lock bag it will "perspire" in the bag and absorb some of the moisture back in and wont be as tough.  Also If you save some of the marinade throw a little of that in there too and shake it up it will absorb more flavor while its in the fridge.  Gotta do it as soon as you pull it though.

Thanks, actually let it sit from 1 am to 6 am on the dehydrator.  What is the proper way to let them cool?

I pull mine right off when its cooked and throw in zip lock then right into the fridge.

What type of marinade are y'all using? I've made jerky a couple of times over the last few months and I can't figure out the right marinade mixture. I've used Dale's mixed with red pepper liquid smoke, cayenne pepper and a few other spices and I've also used a few different store bought marinades but can't seem to find one I like.  The dale's was to salty and the others were not salty enough. I like real spicy jerky but I can't seem to get it very spicy even adding tons of cayenne pepper.
