Mexican Sliced Pork Soft Tacos

Ingredients:
4 to 5 Tablespoons Extra-Virgin Olive Oil
Salt and Pepper
1 Tablespoon Chili Power
1 Tablespoon Ground Cumin
1 Tablespoon Ground Peppercorn Medley
2 Pork Tenderloins, trimmed
1 Onion, chopped
1 Jalapeno Pepper, seeded and chopped
1 Lime, juiced
2 to 3 Tablespoons Finely Chopped Cilantro Leaves
1 Onion, quartered and thinly sliced
12 (6-inch) Soft Flour Tortillas
 
Directions:
Mix together seasonings and rub down the tenderloin. Rub the grill pan with extra-virgin olive oil and grill for 20 minutes. Heat skillet over medium-high heat with a tablespoon of extra-virgin olive oil, add onion and jalapeno and cook a few minutes or until the onion are brown. Wrap tortillas in damp clean towel and warm in microwave for 2 minutes. Thinly slice pork and place in tortilla with onions and pepper. Top with cheese and serve.
